‘From the Dash Farms vineyard, located in Faraday, kinda Macedon, via Bendigo, in Central Vic. Around two weeks on skins, wild ferment, goes to 20% new French oak and the rest older. No fine, no filter, no adds, touch of SO2. No androids or electric sheep here.
It’s a supple, moreish red of mellow disposition, dark, rich cherry fruitiness, a bit of old pipe tobacco character, smoked paprika, that peppery note of Cajun spice with a kind of sweet, beefiness in there too. And it all fits so well together. Cool, orangey acidity lifts things below, a fresh finish greets the drinker per quaff. Shimmery, shiny texture, satiny too. A little crackle of spiky, minerally lift in it as well. Absolute delight, and some complexity to boot. 93 points.’ Mike Bennie, The Wine Front
Vineyard - Dash Farms in Faraday on the Macedon side of Bendigo. An elevated, cool, sheltered valley where fruit ripens at a measured pace on a granitic soil - there are cresting reefs of granite rising between the vine rows.
Winemaking - Harvested 4 April. The best fruit was selected and destemmed, then plunged once a day. Wild yeasts were allowed to complete the fermentation, maceration was 13 days. Pressed to predominantly older neutral French oak barrels, with 20% new French oak. Maturation was 12 months, racked once. 50/50 MV6 and D5V12 clones, co-fermented. No additions apart from sulphur, no fining or filtration. Vegan friendly.
