Vineyard - Witchmount Estate. Fairly conventional, but new vineyard manager Glen Whitefield is experimenting with cover crops and other innovations to move towards more sustainable agriculture. For two growing seasons now there have been no herbicides used under vine.

Winemaking - Harvested at sparkling base ripeness (10.1% ABV). Whole bunches pressed to tank for fermentation by wild yeast. After 17 days the wine was cooled to settle and bottled. There have been no additions to this wine (preservative free), and there has been no fining or filtration. Vegan friendly.
