It’s a lighter, vibrant expression, a little abstract in its tang and pluck, a juiciness, a shimmer of tannin, a dose of amaro and bitter botanicals in the mix. It’s delicious, sour-sweet in a way, a loose knit feel and distinctly in the zone of gulpability. You’d chill this and guzzle it. Vineyard - Dash Farms in Faraday on the Macedon side of Bendigo. An elevated, cool, sheltered valley where fruit ripens at a measured pace on a granitic soil - there are cresting reefs of granite rising between the vine rows.
Winemaking - Harvested 4 April. 20% of the fruit was placed in the bottom of the fermenters, the rest gently destemmed over the top. There was no plunging, just cap rolling. Wild yeasts were allowed to complete the fermentation, maceration was 10 days. Pressed to predominantly older neutral French oak barrels, with a couple of second and third fill barrels in the mix. Maturation was 9 months. 50/50 MV6 and D5V12 clones, co-fermented. No additions apart from sulphur, no fining or filtration. Vegan friendly.
