eruption! sunbury cabernet franc

Vineyard - Located in the cooler, elevated area near Riddells Creek at the northern end of the Sunbury appellation, the 30 year old Cabernet Franc vines are planted on shallow granitic soils that straddle the edge of the gorge that drains into the Longview Creek.

Matthew took over management of the Franc, Riesling and Chenin blocks of this vineyard for Blood Moon in 2015. A rigorous pruning regime was undertaken to retrain vines, which resulted in a low yield for that first harvest. Mulching to suppress weeds, retain moisture and promote soil health has seen a return to sustainable yields without sacrificing quality.

Winemaking - Hand-picked in mid April, Cab Franc whole bunches (with a tiny amount of Riesling) were sealed up and allowed to undergo carbonic maceration for two weeks, before a gentle stomping to release some juice. Indigenous yeasts completed fermentation. Juice poured over by hand once a day before being basket-pressed to barrel for winter. No additions, fining or filtering.

Only minimal sulphites added.
