2018 YARRA Valley Cabernet
Vineyard - Matthew has looked after this vineyard, which is located halfway between Hurstbridge and St Andrews, full-time since 2015. Cabernet Sauvignon and Cabernet Franc vines were planted over 30 years ago on a steep western facing aspect on grey clay soils that drain into the Diamond Creek. This is a warmer site relative to the greater Yarra Valley suited to late-ripening varietals.
Winemaking - Another dry summer meant we had very small berries, and not as many of them! However, the flavours were great. So the grapes were crushed and worked quite hard to begin with, then some whole bunches that had been put aside were thrown into the ferment (about 10%). Fermentation was complete after about 10 days, but the wine was left to soak on the skins for a further 2 weeks before being basket-pressed to barrel for 16 months maturation; the oak was a range of ages, from 2 year old to very old. Racked once. Wild yeast fermented, unfiltered, unfined.
Minimal sulphites added.
